New on the bar scene : Cocktail bar 'The Waiting Room' opens on Münsterstraße

David Kunze has opened his cocktail bar The Waiting Room in the former chocolate café Mirabelle on Bonn's Münsterstraße. The hospitality industry specialist comes with international experience.

After three months of renovation, the space is almost unrecognizable: Decked out in elegant, black-grey industrial chic, 45 guests can find a place in this cocktail lounge.

And this should be taken quite literally. Each guest is greeted personally, his coat removed and taken to a seat. "When the bar is full, the bar is full," explains Kunze. There are no standing guests in The Waiting Room. The 36-year-old host, trained hotel specialist and trained Food & Beverage business economist, has worked internationally, most recently in Australia for the Melbourne Pub Group and in Dubai in the seven-star hotel Burj al Arab as bar manager in the "Gold On 27" hotel bar.

He considers his first self-owned bar as a "modern Speak-Easy-Bar", which can be traced back to the North American prohibition period. There and then, people spoke quietly in secret bars. In The Waiting Room, antique spirits, such as a Hennessy cognac from the Second World War, are displayed in a showcase.

On the cocktail menu are 16 selections, such as the Kirsch Negroni (cherry brandy, homemade Vermouth Blend, Campari and chocolate bitters), the average price of cocktails is ten euros.

Conventional ice cubes are not used, but instead crystal clear pieces of ice blocks, in which the logo of the bar is imprinted. "The ice is the gold of the bar," says Kunze. In addition, the sous vide low-cooking process intensifies the taste, for example in the Limoncelli. All syrups are homemade, the juices freshly squeezed and liqueurs (for example Falernum or Pimento Dram spice liqueur) and cocktail bitters are prepared in house.

The snacks, called "Bites", include the pickle trilogy (6.90 euros), a cheese selection with cranberry mustard (10.90 euros) and salted parmesan popcorn or peppery chips with truffle sour cream (3.50 euros each). Elektro-Swing will be played on Fridays, and next year Kunze is planning to open a tasting room in the basement.
